Watermelon, Blueberry and Spinach Salad with Feta

This is one of my all time favorite summertime salads.  I discovered it in the 2005 issue of Shape Magazine a while back and have modified it slightly by adding grilled chicken for a yummy entree salad.  Enjoy!

INGREDIENTS:
2 tablespoons lemon juice or lime juice
1 tablespoon honey
4 cups spinach leaves
2 cups seedless watermelon, cut into 1/2 inch cubes
1 cup blueberries, washed and dried
1/2 cup seedless cucumber, sliced (unpeeled)
1/2 cup red onion, cut into thin slices
1/2 cup feta cheese, crumbled
(optional) 2 grilled chicken breasts, cut into cubes

DIRECTIONS:
1.  Whisk the lemon or lime juice and honey in a large bowl.
2.  Add spinach; toss lightly to coat.
3.  Add watermelon, blueberries, cucumber, onion, and chicken; toss.
4.  Top with feta cheese
Makes 4 servings
